Our Oysters
and Littlenecks are transplanted, and individually tended to on 6
acres of
tidal flats within Wellfleet Harbor.The harbor area covers thousands
of acres
and is unique because of the large tidal flow,( 9 feet average ) and
the existenceof
many tidal marshes which provide food for the native and
aquaculturally
grown shellfish. The Wellfleet Oyster has beenworld renown for
300 years,
and has been shipped to countries all over the world. The Littlenecks
are a hybrid
variety which grows faster, and produces a better yield because
the shell
is thinner. (due to the rapid rate of growth) The taste is unique because
of the
water flow, and an abundance of nutrients, minerals, and fresh water intrusion.
The harbor
is constantly monitored for water quality, and is certified clean by the
State of
Massachusetts. At least two thirds of the harbor is bounded by either
National
Seashore, and or Conservation (Audubon Society) land.

Located
some seventy five miles out into the Atlantic ocean on the outer
end of
