Our Oysters and Littlenecks are transplanted, and individually tended to on the tidal flats within Wellfleet Harbor.The harbor area covers thousands of acres and is unique because of the large tidal flow, ( 9 feet average ) and the existence of many tidal marshes which provide food for the native and aquaculturally grown shellfish. The Wellfleet Oyster has been world renown for 300 years, and has been shipped to countries all over the world. The Littlenecks are a hybrid variety which grow faster, and produces a better yield because the shell is thinner. (due to the rapid rate of growth) The taste is unique because of the water flow, and an abundance of nutrients, minerals, and fresh water intrusion. The harbor is constantly monitored for water quality, and is certified clean by the State of Massachusetts. At least two thirds of the harbor is bounded by either National Seashore, and or Conservation (Audubon Society) land. You haven't lived until you've tasted Wellfleet shellfish!
